But what about the people lurking in the shadows. No not the bad guys, the good guys. The good guys that act as sort of a food body guard, exposing the unfair, unjust, and immoral food practices. These super heros are Fair Food Fight! They bring you the information, you get to decide what you want to do with it.
Fair Food Fight’s
Jamacian Jerk Chicken
Best if using Nature’s Prime Organic Foods chicken & other USDA Certified Organic Ingredients.
2-3 lbs. bone-in chicken, in pieces – breast pieces should be cut in half
¼ c. coconut (warmed to liquid) &/OR olive oil
2½ T. sucanat
2-4 cloves garlic
¼ c. finely chopped onion
1 tsp. lime juice OR vinegar
1½ tsp. salt
½ tsp. black pepper
2 tsp. thyme
1 tsp. allspice
1 tsp. nutmeg
¼ tsp. cayenne pepper
- Using a blender or small food processor, puree all ingredients (except chicken) together until smooth.
- Spread sauce over the chicken, making sure each piece gets coated well. Let it marinate for at least 20 minutes.
- To bake: Place chicken pieces on a lightly greased baking pan. Bake at 425°F for 15 minutes on each side, until done.
- To grill: Place chicken pieces over moderately high heat. Cook for 10 minutes on each side, until done.
Nutrition Tip: Tasting black pepper sends a message to your stomach to increase its production of hydrochloric acid, thereby improving your digestion.
